I can cook. I'm no 4-star chef...and my culinary expertise is a tish limited...but I can cook...real, grown-up, adult food choices that require more than a microwave to be prepared. And I'm thankful for that.
There used to be a time when Ramen noodles were my friend (and sometimes, if I haven't been grocery shopping in awhile...they're still my friend). There used to be a time when Tuna in a can (just plain) was a suitable meal choice. And there was once a time where a simple grilled cheese sandwich (yes, I realize I don't like cheese...but that's an explanation for a different day) was good enough for me for days on end. And when I look around the office, or talk with friends, that's how many of them still eat...Spending every day in a drive-thru (out of necessity, not convenience), or eating up their break-time tethered to the microwave in the break room. Which is fine...but I'll take my tupperware of mesquite grilled turkey, turkey bacon, lettuce, tomato and cucumber sandwich on toasted 9-grain bread, (with homemade, seasoned wedge potatoes on the side) any day (and yes, that is actually what I ate for my lunch break the other day)...because it was absolutely delicious!
I'm not the greatest cook in the world, but I can cook. I'm self-taught, not fancy, and learn from my own mistakes, but I figured as long as I'm not married, now is the time to char everything until it's black, overspice until you sneeze, or try an entirely random combo -- because I don't have to worry about poisoning anyone else but myself ;)
So my culinary repertoire has expanded from grilled cheese and spaghetti...to fancy roasts, holupchi, pasties (the food, not the nipple accessory), homemade soups and stews, stuffed peppers, stir fry, chicken pesto pasta, and this delicious sweet potatoes mashed up into an orange thingy...
And I'm incapable of cooking for one person...so buddy up with me, and you'll eat like a king (don't believe me? check my freezer).
But a freezer full of tupperware...is better than :30 on high any day...
And I'm thankful for that :)
